Notes on sides: I use regular mayo. I have no desire to make my own “paleo” version. I make pretty much everything from scratch, but mayo will never be one of them.


Pea Salad (Dressing: mayo, bacon drippings, dill, onion powder, and salt/pepper)

Broccoli Salad (Close to same dressing as Pea Salad, Broccoli-trimmed into bite sized pieces, almonds, bacon,

carrots (Best recipe – EVER),

Cauliflower Mashed “Potatoes”

Cauliflower “Rice”

Cauliflower Tater Tots – These aren’t really what I expected them to be.. but they were really good. Different.

Brussels Sprouts w/ lime, avocado

Roasted Tomatoes w/ feta(or mozzarella), kalamata olives

Broccoli, steamed and/or w/ Hollandaise

Pear Salad


Roast Cauliflower and Aged Cheddar Soup

Stuffed Eggplant

Crab Salad


No Recipe Needed:

Caramelized Onions (Make lots extra, they store well and can go with a lot)

Roasted Root Veggies – Following this recipe for Roast Carrots, you can roast about anything. Don’t forget to salt it when it comes out of the oven 😉

Green Beans with lemon & garlic butter
